Blueberry and pistachio panna cotta

Panna cotta is a delicious dessert made from milk. This is a lighter version made from yogurt and plant-based milk, for all my vegan friends.

Ingredients
  • 1 cup of coconut yogurt

  • 1/4 cup pf unsweetened oat milk

  • 1 tsp of vainilla

  • juice of 1/2 an orange

  • 6 to 7 tbsps of monk fruit

  • ginger to taste

  • 12 grs of gelatin


Blueberry jam
  • 1/2 cup of blueberries

  • juice of 1/2 an orange

  • 1 tbsp of lemon juice

  • ginger to taste

  • sweetener to taste (optional depending on the sweetness of your fruit)

Instructions
  1. Mix all the ingredients for the pan cotta, except for the gelatin.

  2. Hydrate the gelatin with 3 tbsps of water and let it rest for 5 minutes. The gelatin will become harder.

  3. Pour the first mixture into a medium heat pot and add the gelatin.

  4. Keep mixing until the gelatin is completely melted.

  5. Add the mixture to silicone molds and refrigerate for 30 minutes or until completely solid.

  6. In a medium heat pot, add the ingredients for the blueberry jam. Put a lid on and let it cook for 5 minutes.

  7. Once the 5 minutes have passed, mash the blueberries with a spoon and cook for 3 more minutes.

  8. Take the panna cotta from the mold and serve with the jam and chopped pistachios.
