French Toast Stuffed with Cream Cheese and Strawberries

#1 fan of French toast, that's why I had to make this version filled with cream cheese, strawberries and honey; accompanied by more strawberries macerated with mint and yellow lemon.

Ingredients
  • 4 slices of brioche bread

  • 2 eggs

  • 50 ml unsweetened vegetable milk

  • Cinnamon and monk fruit to taste

Filling
  • 100 grams of cream cheese at room temperature

  • juice of 1/2 eureka lemon

  • strawberries to taste

  • 1 cd honey

Strawberries with mint
  • fresh mint to taste

  • juice of 1/2 eureka lemon

  • 1 tsp honey

  • strawberries to taste

Instructions
  1. Cut the strawberries into cubes. Mix the filling ingredients and taste to adjust the sweetness to taste

  2. Cut the strawberries in half, finely chop the mint and mix with the other ingredients. Let them marinate in the refrigerator for about 10 minutes.

  3. Fill one slice top with the strawberry cream cheese mixture and add the other slice on top to cover.

  4. Mix the eggs, milk, cinnamon and monk fruit and dip each bread on both sides.

  5. Cook in a frying pan over medium heat until golden brown on both sides.

  6. Add the macerated strawberries on top along with more cream cheese and honey.
