Stuffed apple muffins, with crumble

These muffins became the favorite recipe on my Instagram for the Christmas season. They are a low sugar version, gluten free and perfect for sharing.

The special touch for the apples is to season them beforehand, so that they have just the right caramelized flavor (don't skip that step).

We start the Christmas recipes with these muffins! I already missed making desserts in their healthy version and these were a success; They have a crumble that gives them a special touch and you can fill them! In the instructions I explain how:

Dry ingredients
  • 1 cup oat flour

  • 1/2 cup of almond flour

  • 1 tsp baking powder

  • pinch of salt

  • pinch of cinnamon


Wet ingredients
  • 1/3 cup coconut sugar

  • 2 eggs

  • 50 ml unsweetened vegetable milk

  • 50 g applesauce (unsweetened) or melted coconut oil or melted butter

  • 4 apples in cubes (+ Cinnamon, 1 lemon and 4 cds of coconut sugar to season them)


Crumble
  • 50 grams of butter

  • 45 grams of flour

  • 5 cds of coconut sugar

  • pinch of cinnamon


*Jam for the filling (optional, you can fill them or not)

Instructions
  1. Preheat the oven to 180°C

  2. In a bowl, mix the dry ingredients.

  3. In another bowl we mix the wet ingredients. Add the dry ingredients to this bowl and mix.

  4. Cut the apples and add them to a frying pan over medium heat with 1 tsp of butter; Season them with cinnamon, lemon and coconut sugar, let them rest for 5 min.

  5. Let them cool and then add them to the dough mixture. Mix everything together with a spatula lightly so as not to overmix.

  6. For the crumble, melt the butter and add it to a small bowl. Mix the other ingredients with the melted butter and put the mixture in the refrigerator for about 5 minutes or until it solidifies.

  7. We distribute the mixture into muffin molds.

  8. Take the crumble out of the refrigerator (it should already be solid) and start breaking it into small balls to place on top of each muffin.

  9. We bake at 180º for about 25-30min.

  10. Let them cool completely. Then, with a knife, form a circle on the top of each muffin and add 1 tablespoon of jam to fill. Add the dough you removed to the hole to cover the top and that's it.
